Yellow tofu made from Besan powder.

Besan powder

First, pour one cup of Besan powder into blender.
Then, pour 3 cups of water. Mix and blend.
Pour into a plastic container, preferably clear plastic, so that you can see the layer of sediments.
Use a mesh strainer while pouring into the container to catch some powder lumps left behind unmixed.
Leave the mixture stand overnight or 5-6 hours.
You will see the white (glutinous) sediments at the bottom half of the container.That is the portion of mixture you are going to use.
Remove the top yellow clear liquid portion of the mixture by pouring out carefully or scooping up with a small cup and discard.
Put 2 cups of water in nonstick pot and heat to boiling temperature.
Add oil (about 1/5 of the cup) and some salt into boiling water.
Stir the Glutinous portion of the mixture and loosen up in the container.
Pour it all into the boiling water.
From then on, stir nonstop in the pot in a circular motion until the mixture is thickened . If you stop stirring while still being heated, it will form glutinous lumps and start bubbling up, splashing up. Remember, it is very hot if the content splashed onto your hand. I do advise you to use the kitchen mitten when stirring the pot.
You should be able to see the content thickened to the point that when you scoop it up and pour it back in with the spoon, it stays on top of the surface temporarily to make a visible impression.
Taste the mixture to make sure it is well cooked and add a little of salt if needed.
Pour it into Aluminium foil tray. (Do not use thin plastic cups. The content is too hot and it will melt the cup.)
Let it stand without moving it until cold and formed.
